Vegan Grilled ‘Cheese’ Sandwich

Maybe you’ve noticed that I am all about practical veganism. I write that I am vegan and how I live vegan, especially in my weekly diaries. This is all very practical. I am planning to write more about the why too, that’ll be soon! Yet, practical veganism is important too, because our society isn’t that vegan friendly. So for now, I have another practical part for you. Today I am sharing my favorite recipe for a zero waste vegan grilled ‘cheese’ sandwich with you!

About why I am vegan so far

As I said, I have not written about why I am vegan so often just yet. That’s something for the future. Yet, this doesn’t mean I haven’t written anything about veganism on this blog at all. You can read practical parts in my weekly diaries. But I have also written about a lot of documentaries and books. Vegan Cheese

Cheese is usually the last thing vegans give up. I’ve heard that this is due to an addictive part in milk, to make the calf come back to its mother to drink. But, I guess there is another reason. The vegan substitutes I’ve had so far aren’t so good. It’s hard to find good vegan ‘cheese’ in a store in my opinion. When I think of good vegan ‘cheese’, I can name two. 1 is the vegan blue ‘cheese’ I’ve had at WakuWaku in Utrecht. This was truly amazing and tasted a lot like cheese (even my non-vegan boyfriend agreed to this). 2 is the vegan ‘cheese’ I make myself. And this vegan ‘cheese’ is the ‘cheese’ I want to share today for this vegan grilled ‘cheese’ sandwich.

A real grilled cheese sandwich is something I was addicted to before I went vegan, so this was something I really wanted to find a replacement for. If you have followed me for over two years, you might have read that I had tried packaged vegan ‘cheese’ slices for a vegan grilled ‘cheese’ sandwich. This wasn’t what I expected, it’s not as good as the real thing. So, when I found the recipe I am about to share with you, I felt so happy! This is something that can replace the real thing for me, for when I have cravings. I love this ‘cheese’. Turns out it is also very simple, I personally use only two ingredients. The recipe is zero waste as well, which is awesome!

Anyway, I won’t keep you waiting, here’s the recipe:

2 Ingredient Zero Waste Vegan Grilled Cheese Sandwich

Ingredients

  • Nutritional Yeast Flakes
    • I use the brand Pieter Pot (they’re organic and zero waste)
  • Vegan Mayoniase
    • I use Remia Mayolijn in glass (can be bought in almost any supermarket in The Netherlands)

Recipe

I use the two ingredients in a 2/1 ratio. Two spoons of nutritional yeast and one spoon of vegan mayonnaise. That is the amount I use for one grilled ‘cheese’ sandwich, so for two slices of bread. You first put the nutritional yeast in a bowl and then add the mayonnaise. When you mix it together, this gives you a yellowish substance which looks like this:

You put this mixture on a sandwich, grill it and that’s it. There’s you vegan grilled ‘cheese’ sandwich! I like to eat the sandwich with ketchup, but maybe that’s a Dutch things haha. You can also add spices if you like. I’ve seen recipes with cumin, cayenne and more. It’s just whatever you prefer and I guess I am basic since I really like the two ingredient recipe haha!
